🎃 Pumpkin Bread Muffins 🎃

Ingredients:

  • 2 cups flour

  • 1.5 cups sugar

  • 1 tsp baking soda

  • 2 tsp baking powder

  • 3 tsp cinnamon

  • 1/2 tsp salt

  • 3 eggs

  • 1 cup oil (I used avocado oil)

  • 15 oz (1 can) pumpkin puree



Instructions:


  1. In a bowl, whisk together the dry ingredients.

    • 2 cups flour

    • 1.5 cups sugar

    • 1 tsp baking soda

    • 2 tsp baking powder

    • 3 tsp cinnamon

    • 1/2 tsp salt


  1. In a second bowl, whisk together the wet ingredients.

    • 3 eggs

    • 1 cup oil (I used avocado oil)

    • 15 oz (1 can) pumpkin puree

  1. Pour wet ingredients over dry ingredients then whisk together until smooth. This will make 2 loaves of pumpkin bread or 12 large muffins.


  1. Bake at 350 for 30 minutes or when a toothpick comes out clean!


If you love pumpkin, you will love this simple recipe! I think that the key to a good muffin is the size, bigger is better!


I use these muffin liners, and these scoops to get the perfect muffin every time.
